Ginger Peachy Cobbler

Biscuits Topping:
1 1/4 cup flour
1/4 cup sugar
1 tsp baking powder
1/4 tsp salt
6 tbls butter
1 tsp vanilla extract
1/2 cup milk
1/4 cup nuts


Peach Filling:
2 - 3 lbs frozen peaches
2/3 cup sugar
3 tbls flour
1/2 tsp ginger
1/2 tsp cinnamon
1 tbls lemon juice
1/4 - 1/2 cup water as needed

Peaches:
melt sugar with lemon juice, add flour, ginger and cinnamon.
put in peaches.
add water as needed to make a syrup.

Biscuits:
mix flour, sugar, baking powder and salt.
cut in butter.
add milk, vanilla, and nuts. stir until just formed.
drop biscuits onto cooked peaches.

Bake mess @ 350* for roughly 45 minutes or until bisuits are brown on the tops.
