Just in time for the 4th! Oh wait...

So I'm late as usual.

Today, I present to you the Best Baked Beans EVAR! recipe and the recipe for the Best Potato Salad EVAR!

Now. I'm no stranger to goobery potato salad. I used to make it that way myself. But since the discovery of this particular salad, I just can't bring myself to make it any other way. It's the simplicity -- the sublime mingling of very minimal flavors to make an all out excellent dare-I-say-Classy potato salad.

We begin:

Best Potato Salad EVAR!

2 lbs white potatos - cubed & boiled
1/2 cup green onion - chopped
1 cup mayo
1/4 lemon juice
2 tbls fresh dill - finely chopped
1/4 to 1/2 cup capers {I lean towards the 1/2 cup}
4 boiled eggs - chopped (optional) {I never use the eggs}
Salt/Pepper to taste

This is where things get strange.
Boil the potatos to just before fork tender, then dump them in a lidded bowl with the lemon juice and some kosher salt. Snap the lid on and put in the fridge to cool.
Don't touch! Just walk away.

After the potatos are cool, you have my permission to mix in all the rest of those lovely fixin's.
I like to mix them all together in a separate bowl and then mix in with the potatos to minimize any mixing damage. (That was a lot of 'mix'es. I need a new verb.) Let it meld. I know all those fancy schooled cookers say melding is a myth. But this potato salad Does Too Taste Better The Next Day or at least until is really well chilled.

Okay The next course:

I like gloppy thick and diabetic-killing sweet baked beans. This is drastically close to that particular desire. Get crazy with the bacon and try out different smoked styles. We used an apple smoked bacon once and it was quite lovely. Excellent with all bbq's and cook-outs.

Best Baked Beans EVAR!

1 largish can of Pork and Beans (or two regular sized ones)
3 slices of bacon (or if you don't have any. which is usually the case with us -- use a drop of liquid smoke)
1 medium onion
1/3 cup drk brwn sugar
1/3 cup half molasses/half maple syrup
2 tbls prepared mustard
1 tsp powdered mustard
dash or two or three of tobassco
1 tbls worcestestestsestersershire
salt & pepper to taste

In a pan on the stove render the bacon fat - or olive oil if you aren't feeling the bacon being involved. Toss in the onion and sweat til translucent.
When the onions are ready just add in the beans and all the other ingredients and cook on medium heat for 2-3 minutes. Transfer to a oven-safe lidded casserole and cook @ 350* for an hour.
After the hour is up, we remove the lid give it a good stir and let it sit on the stove top for about 15-20 minutes before stirring. It really thickens up and becomes the best gooey yummy gloppy tasty baked beans.
